Ended up logging a support call with VMware and got it working! Thought I'd share in case it helps others with the same problem.
What they did differently to me was to import the PFX file from within the personal local computer certificates bucket in MMC console rather than just open the PFX file and run through the wizard from explorer as I had done. They also restarted the connection service on our internal view server as well as the security service on our security server.
